I heard it was National Eat a Peach Day and was like, “Count me in!” Peaches are my all-time favorite summer fruit and some of the best peaches are grown right here in Oklahoma. This recipe was given to me by my sister and with today being a peachy kind of holiday, I thought it would be fun to share it with you! If peaches aren’t your thing, this recipe also works with a variety of fresh fruits.
Ingredients
7-8 medium peaches (boil 30 seconds, then peel & slice)
1 teaspoon lemon juice
3/4 cup sugar
1/4 cup flour
1/4 cup instant tapioca
1 teaspoon cinnamon
milk for washing crust
course sugar for sprinkling over crust
2 pie crusts
Instructions
- Preheat oven to 375 degrees.
- Place sliced peaches in bowl. Gently fold in lemon juice, sugar, flour, tapioca, and cinnamon. Pour into pie crust.
- Roll out top crust into strips. Top peaches with lattice crust. Brush with milk. Sprinkle with course sugar. Bake approx. 45 minutes or until golden.
