I heard it was National Eat a Peach Day and was like, “Count me in!”  Peaches are my all-time favorite summer fruit and some of the best peaches are grown right here in Oklahoma.  This recipe was given to me by my sister and with today being a peachy kind of holiday, I thought it would be fun to share it with you!  If peaches aren’t your thing, this recipe also works with a variety of fresh fruits.

Ingredients

7-8 medium peaches (boil 30 seconds, then peel & slice)

1 teaspoon lemon juice

3/4 cup sugar

1/4 cup flour

1/4 cup instant tapioca

1 teaspoon cinnamon

milk for washing crust

course sugar for sprinkling over crust

2 pie crusts

Instructions

  1. Preheat oven to 375 degrees.
  2. Place sliced peaches in bowl.  Gently fold in lemon juice, sugar, flour, tapioca, and cinnamon.  Pour into pie crust.
  3. Roll out top crust into strips.  Top peaches with lattice crust.  Brush with milk. Sprinkle with course sugar.  Bake approx. 45 minutes or until golden.
